The Ultimate Veggie Quesadilla

Mmmm mmm. Now THAT is a veggie quesadilla. Want to make it? Here’s what you do…

• Cut some broccoli and cauliflower pieces and steam them on the stove. (with one of those metal steamer thingy’s with holes in it you put inside a pot)
• Place a large spinach tortilla on a big frying pan and spread the cheese evenly across. Adjust the heat to medium/low.
• Chop up an ear of corn and some onion. (Our onion pile is usually equal to our corn pile, but adjust portions to your taste.)
• When the cheese looks like it’s about done, take the veggies out of the strainer and place them evenly across one half of the tortilla.
• Turn the heat off and pour on the corn and onion.
• Fold over the tortilla and smoosh together.

That’s all that’s to it. Cut in half and share with a friend!

Veggie Sandwich

 This is a Snack favorite of ours we first ate at a local cafe. It was so good, we had to create it back home.

- toast 2 slices of whole wheat bread
- spread pesto on each slice
- add a thick slice of fresh mozzarella cheese
- spread on 1/2 an avocado
- cover avocado with diced carrots
- top with sprouts and spinach.

Viola!
