Veggie Sandwich
This is a Snack favorite of ours we first ate at a local cafe. It was so good, we had to create it back home.
- toast 2 slices of whole wheat bread
- spread pesto on each slice
- add a thick slice of fresh mozzarella cheese
- spread on 1/2 an avocado
- cover avocado with diced carrots
- top with sprouts and spinach.
